Super Moist Chocolate Cake

The cake:

  • 125g self-raised flour
  • 30g plain flour
  • 190ml milk
  • 125g unsalted butter
  • 3 eggs, slightly beaten
  • 160g brown sugar
  • 45g cocoa powder
  • 1/4 tsp baking soda
  • 100g melted dark chocolate

The frosting:

  • 375g melted dark chocolate
  • chocolate curls
  • 190ml thickened cream
  • berries


  • small bowl
  • large bowl
  • 20cm round pan
  • baking paper
  • saucepan
  • 7 inch piece of aluminum foil

Cake Directions

  • Grease a 20cm round pan
  • Line with baking paper
  • Preheat the oven 160 degrees C
  • Put the butter and sugar in a small bowl and beat up until light and fluffy.
  • Beat in eggs one at a time until homogenous.
  • Mix in sifted flour, baking soda, cocoa, then the melted chocolate and milk.
  • Pour the batter into the pan and bake for 1 hour 15 minutes. When ready the cake must be firm to touch.
  • Let the cake cool for 15 minutes in the pan, then put onto wire rack.

Frosting Directions

  • Put cream and chocolate in to the small pot.
  • Stir over the heat until melted.
  • Put into the bowl, let it cool and refrigerate until almost set.
  • Beat with an electric mixer until pale
  • Spread the topping over the cake, decorate with berries.
